Are you are in need of a comfort dish to feed the masses (or just a big ol’ pot of goodness all for yourself)? Well, you have come to the right place. My easy potato soup recipe is straight from my country kitchen, passed down from generation to generation.
I am not a fancy 5 star chef or anything. You most certainly will not find any fancy ingredients or dishes here. Just simple country recipes with simple easy to find ingredients.
With that being said…
Here is how to make homemade potato soup

Supplies:
- 8qt Stock Pot
- Knife
- Chopper (optional)
- Measuring Cup
- Soup ladle
Ingredients:
- 8 Large Idaho Potatoes
- 1 Small Yellow Onion
- 1 Stick Butter
- 1/4 cup flour
- 1 Cup Milk
- Salt
- Pepper
Instructions:
- Wash and peel potatoes
- Dice potatoes (the smaller the pieces the faster they cook)
- Rinse potatoes until the water is clear. This will remove most of the starch.
- Cut and dice onion
- Add potatoes and onion to large pot and add just enough water to cover.
- Cook on high until boiling. Once boiling add your stick of butter and reduce heat to medium.
- Continue cooking until potatoes are tender. Check with a fork, and when they break apart easily, they are ready.
- In a separate bowl or cup, mix together your milk and flour using a whisk or fork. Stir until mostly smooth. Don’t worry about little clumps, these will smooth out later.
- Add your milk and flour mixture to the pot.
- Continue stirring on medium heat until thickened
- Now its time to add your salt and pepper. I always add about two tbs of salt, but it is up to you. Just season to taste!
- Congrats! Your easy old fashion potato soup is done! Enjoy!
Easy Homemade Potato Soup

- In a separate bowl, or cup, mix together your milk and flour with a whisk or fork until somewhat smooth. ( A few lumps is no big deal, they will smooth out later.
- Add your milk and flour mixture to the pot.
- Continue stiring on medium heat until thickened.
- Now is the time to salt and pepper to taste. I suggest about two tablespoons of salt, but to each their own.
- Congrats! Your potato soup is done! Enjoy!

Can I use chicken broth instead of water?
I have never tried this, but I bet it would be fantastic! If you do, I would wait to add any salt, as the broth tends to be salty on its own. Let me know how it turns out!
I use chicken broth instead of water, I add celery very finely diced. This is how m mom made hers. You could also use celery seed in place of the celery. There is nothing more comforting 😋

This looks like the old fashioned soup my mom made when I was a child. No cream, bacon, cheese, etc! Just a thinner plain potato soup in which you really taste the potatoes. She topped it with parsley. I’m going to try it!

My daughter was home from college sick and requested potato soup. I found this and it was great! I used a 3lb bag of russet potatoes, added an extra stick of butter and some garlic powder. Thanks for your simple recipe. I did add 1 can of chicken broth and 1 can of water to cover my potatoes (may need more water if more potatoes are used – I used 4 large potatoes). I did use less salt since the chicken broth had some in it.

I absolutely love this recipe! So easy, I made it vegan, used plant based milk, plant based butter. I like a little spice so I added thyme, a bay leaf, crushed red pepper and dried parsley. My husband raved about it and after trying other vegan recipes, this one has got to be the best! Cudos for finally finding a great potato soup recipe!
