Loaded potato bites are my family’s favorite side dish. These remind me of something you would get from one of those expensive steak houses, but without the expensive menu price. I mean, you can’t really go wrong with potatoes, bacon, and cheese right? And this recipe is so stupid simple, I believe just about anyone make it. These are a great side dish, or could also be used as an appetizer.
Loaded Potato Bites
Supplies:
Ingredients:
- 5 Medium Sized Red Potatoes
- 2 tsp Garlic powder
- 2 tsp Onion powder
- 1/4 Cup Melted Butter
- 1 tsp Salt
- 2 Cups Shredded Cheese
Instructions:
- Preheat oven to 400
- Scrub and Wash Potatoes
- Slice potatoes (about 1/4 inch thick) and rinse to remove starch. I use a mandoline slicer for this step, but you can just slice with a knife.
- Arrange sliced potatoes on parchment paper lined baking sheets
- Add garlic powder, onion powder, and salt to melted butter and stir
- Using a basting brush, brush butter mixture over potatoes. Make sure they are all well covered
- Place in oven for about 15-20 minutes, or until potatoes can be easily cut with a fork
- Remove baking sheets from the oven and cover potatoes with cheese and bacon bits
- Bake for another 2 minutes and remove from oven
- Enjoy by themselves, as a side dish, or even dipped in sour cream!
